Seven Days of Greens, with the support of Mitsukoshi Fresh, successfully conducted two batches of the Tayabas Bay Oyster Appreciation Masterclass at Mitsukoshi BGC on August 15 and September 26, 2026.
Created to deepen appreciation for locally grown Philippine oysters, the masterclass took guests on a journey from hatchery to half shell. Participants learned about hatchery-grown and single-grown oysters, floating basket cultivation, depuration, diploid versus triploid oysters, and merroir—how the waters where an oyster grows influence its flavor and character.
The sessions also gave participants a hands-on experience in handling, shucking, tasting, and enjoying fresh Tayabas Bay Oysters, while learning about the role responsible oyster farming can play in supporting coastal livelihoods and marine ecosystems.
